2. Depends. if you stay with Stock firmware & root access, you can explore the things which require root, such as, AdBlock, CPU settings, tasker and so on. But if you want to flash a custom ROM, you can do that as well.
3. Again, it’s up to you. You can look at the ROM features, customizations it is offering, stability, performance and then decide. If you are going to do it for the first time then I would suggest you to go for stable ROMs such as Lineage OS or crDroid.
